Chocolate Tart


Base:


  • 9 digestive biscuits
  • 35 g butter

Filling:
  • 200 g dark chocolate
  • 200 g court-flavored cheese
  • 150 g sugar
  • 1 tsp vanilla sugar
  • 2 eggs 
  • 2½ dl whipped cream

Method:

  1. Crumb up the cookies and add in the melted butter. Press the batter into a dish.
  2. Melt the chocolate. Mix the cheese, 100 g sugar, vanilla sugar, egg yolks and the melted chocolate.
  3. Beat the egg whites and the remaining sugar into a hard foam. Mix all the mixtures together and pour on top of the base. 
  4. Freeze over night.
  5. Serve and Enjoy! :D

Peach Pie



Base:


  • 100 g butter
  • 2 dl sugar
  • 1 egg
  • 1 tsp baking powder
  • 2½ dl flour

Filling:

  • 1 pack sour cream
  • ½ dl sugar 
  • 1 egg
  • 1 can peaches

Method:

  1. Beat the butter and sugar into a foam. Add the egg and beat well.
  2. In another bowl mix the baking powder and flour together and add into the egg batter.
  3. Press the batter down into a round, buttered pie pan. Put the peaches onto the pressed batter and on top add the sour cream mixture. (Mix all the filling ingredients together except the peaches)
  4. Bake at 175 degrees for about 40 minutes.
  5. Serve and Enjoy! :D

Choco-Shapes


Ingredients:

  • 9 oz white chocolate
  • 1 bottle red food coloring
  • 1 bottle green food coloring
Method:

  1. Melt the chocolate in a mixing bowl. Remove from the heat and stir until smooth.
  2. Using a spatula, put 1/3 of chocolate in a smaller bowl. Add four drops of one color into the small bowl.
  3. Put another third of chocolate into another bowl. Add the other color. Leave the last third of chocolate in the first bowl.
  4. Now you have three different colors of chocolate. Spoon one color at a time into the molds.
  5. Set in freezer for 5-10 minutes. When mixture is hard, gently turn out the shapes.
  6. Serve and Enjoy! :D

Holiday delights



Ingredients:

  • 4 tbsp butter
  • 1 tbsp light corn syrup
  • ½ cup vanilla wafer crumbs
  • 3 oz chocolate
  • 2 tbsp raisins
  • candied or dried fruit
  • white rolled fondant icing
  • candied, dehydrated, or rolled fruit

Method:

  1. Melt the butter and corn syrup over low heat.
  2. Turn off heat. Break the chocolate into pieces and stir into mixture.
  3. Put vanilla wafers into a plastic bag and crush with a rolling pin.
  4. Stir wafer crumbs into the chocolate mixture. Add raisins or chopped candied fruit. Refrigerate in pan until mixture stiffens (about 1 hour).
  5. Wash and thoroughly dry your hands. Roll the mixture into balls and place carefully in foil cups.
  6. Cut stars from white icing. Cut leaves and berries from candied, dehydrated or rolled fruit. Place on top of chocolates.
  7. Serve and Enjoy! :D

Choco-Fruit Kebabs



Ingredients:


  • 2 oz chocolate
  • marshmallows
  • selection of fruit


Method:

  1. Wash the fruit and dry thoroughly with a clean paper towel.
  2. Cut a piece of wax paper to fit your baking pan.
  3. Chop banana, kiwi or any of your favorite fruits.
  4. Pierce onto a kebab stick, alternating fruits and marshmallows, and place onto a baking pan.
  5. Melt chocolate. Spoon chocolate over the kebabs. Put in fridge.
  6. Serve and Enjoy! :D

Minty Heart Melters



Ingredients:

  • 4 oz chocolate
  • 1/4 cup brown sugar
  • 1½ tsp peppermint extract

Method:

  1. Melt the chocolate in a bowl. Stir in the brown sugar and peppermint, making sure it is mixed well.
  2. Spoon the chocolate mixture into tiny heart shaped molds and place molds into freezer for 5-10 minutes.
  3. When mixture is hard, tap back of mold to turn out the shapes.
  4. If you want to you can wrap them into red color foil and give to someone special in a gift box.
  5. Or serve and Enjoy! :D

Terrific Truffles



Ingredients:


  • 2 tbsp cocoa powder
  • 10 tbsp confectioners sugar
  • 2 tbsp butter
  • 1 tbsp milk
  • 2 tbsp cake crumbs
  • (extra cocoa powder)
  • (extra confectioners sugar)

Method:

  1. Sieve the cocoa powder and sugar into a bowl.
  2. Add the butter and milk to the bowl.
  3. Cook uncovered in the microwave for 1 minute.
  4. Mix until smooth, then stir in cake crumbs to make a smooth, firm paste. 
  5. Refrigerate until mixture stiffens (about 1 hour)
  6. Sieve some sugar into one shallow bowl and some cocoa powder into another.
  7. Roll the mixture into balls, then roll in confectioner sugar and other half in cocoa powder. 
  8. Place in foil cups, Serve and Enjoy! :D

Cheese Cake



Ingredients:


  • 1 pack Digestive Biscuits 
  • 200 g butter 
  • 200 g sugar
  • 5 eggs
  • 2 packets of Philadelphia cheese

Method:

  1. Crush the digestive biscuits well.
  2. Melt the butter and mix it with the crushed biscuits to make the base of the cake.
  3. In the cake pan, press the crushed biscuits onto the base.
  4. Mix the cheese, eggs and the sugar together to make the paste for he cake. Mix it well.
  5. Pour the liquid onto the biscuits.
  6. Put it in the oven at 180 degrees for 50 minutes.
  7. Take the cake out of the oven and let it cool down. Then place it in the fridge for overnight and serve next day.

Gulab Jamun



Ingredients:


  • 68 g milk powder
  • 1 tbsp flour
  • 1 tsp semolina flour (mannasuurimo)
  • 1 tsp baking powder
  • 1 tbsp oil
  • 1 egg

Method:

  1. Add all the ingredients one by one into a bowl. I prefer adding the wet ingredients later. 
  2. Mix them so that there is nothing dry in the mixture and that the mixture should be wet.
  3. Then leave the mixture to set for 5 minutes. 
  4. Make tiny balls from the mixture and on MEDIUM heat place a pan and add oil.
  5. Place the balls one by one into the oil and keep rolling them in the oil REALLY gently.
  6. When the balls are golden brown place them into the syrup.
For syrup:

  • 2 cup sugar
  • 2 cup water
  • 2-3 whole Cardamom 

  1. Mix all the ingredients together on the medium heat in a pan and let it boil.
  2. After boiled let it be on the lowest heat and leave it.
  3. When the balls are ready place them in the syrup for about 5 minutes.
  4. Take them out and serve hot or cold.
  5. Enjoy! :D

Orange-Almond Muffins



Ingredients:


  • 5½ dl flour
  • 11/4 dl sugar
  • 2½ tsp baking powder
  • ½ tsp baking soda
  • 1/4 tsp salt
  • 2½ dl almond slices
  • 11/4 dl milk
  • 11/4 dl orange juice
  • 60 g melted butter
  • 1 big egg
  • 1 tsp orange zest
Method:

  1. Mix the flour, sugar, baking powder and soda and salt. Add in the Almond pieces.
  2. Blend the milk, orange juice, melted butter and the egg in another bowl and add it to the flour mixture.
  3. Don't knead the dough.
  4. Add the mixture into muffin tins and bake at 200 for about 25-30 minutes.
  5. Serve. Enjoy! :D

Currant Buns



Ingredients:


  • 100 g butter
  • ½ dl fruit sugar
  • ½ dl currants
  • 2½ dl flour

Method:

  1. Mix the butter and sugar until soft. Add in the currants and flour.
  2. Shape the mixture into small, round buns.
  3. Place them on baking paper and pres them down with a fork.
  4. Bake at 175 degree for about 10 minutes.
  5. Keep an eye on them, because we used fruit sugar so it gives them the golden-brown color faster than normal sugar.
  6. Serve warm or cold. Enjoy!:D

Peanut-Chocolate Bread



Ingredients:


  • 100 g butter
  • 1 dl brown sugar
  • 1 egg
  • 1½ dl flour
  • 1 tsp vanilla sugar
  • ½ tsp baking powder
  • 100 g hazel-peanut crumbs
  • 100 g chocolate pieces

Method:

  1. Blend the butter and brown sugar, blend in the egg.
  2. Add the flour, vanilla sugar, baking powder and the hazel-peanut crumbs and the chocolate pieces.
  3. Place the mixture into a deep pan to create a bread loaf and place into the oven at 200 degrees until toothpick comes out clean.
  4. Cut into slices, serve warm or cold. Enjoy!:D

Sarah Jane's Bakewell Tart



Base:


  • 100 g butter
  • 3/4 dl sugar
  • 1 egg
  • 3 dl flour
Filling:

  • 75 g almond powder
  • 75 g melted butter
  • 1 1/4 dl sugar
  • 1 egg
  • 1 tbsp flour
  • Raspberry jam

Method:

  1. Mix all the base ingredients to a shortcrust pastry and let it set in the fridge for about half and hour.
  2. Mix the almond powder, sugar and the flour into the melted butter for the filling. 
  3. Add the eggs while mixing, so that the mixture becomes a smooth mass. 
  4. Roll the shortcrust pastry into a sheet and line the bottom of the dish and the edges. 
  5. Put a good amount of raspberry jam on the pastry.
  6. Spread the almond mixture on top of the raspberry jam and cook the tart at 180 degree for about 30-35 minutes on the lowest rack. 
  7. Serve and Enjoy!:D

American Morning Pancakes



Ingredients:


  • 4 dl flour
  • 1 tsp salt
  • 2 tsp baking powder
  • 3 dl milk
  • 2 dl buttermilk/sour cream
  • 2 eggs
  • 2 tbsp melted butter

Method:

  1. Mix the dry ingredients and the milk together to form a smooth mixture.
  2. Add in the buttermilk/sour cream, melted butter and the blended eggs. Mix it using force.
  3. On a hot pan, add some of the mixture and bake it so the pancake rises. 

Tips:

  • You can make the pancakes the day before afternoon, wrap them up in foil and in the morning just warm them up in the microwave. 
  • Serve with syrup. Berries are also good with pancakes. 
  • If you want you can add berries into the pancake mixture and then cook it.

Pear Bourdaloue Tart



Ingredients:


  • 250 g shortcrust pastry
  • 4 egg yolks
  • 125 g caster sugar
  • 40 g flour
  • 3 dl milk
  • 125 g butter
  • 25 g ground almonds
  • A few drops of almond essence
  • 4 pears
  • 125 g apricot jam (or any you like)
  • 1 tsp lemon juice 
  • 1 tbsp water 
  • 25 g flaked almonds

Method:

  1. Line a 20 cm flan tin with the pastry and chill for 30 min. 
  2. Prick the pastry well and bake in 200 degree oven for 15 min. Leave until cold.
  3. mix the egg yolks, sugar and flour until smooth.
  4. Pour over gently warmed milk, and stir well.
  5. Over low heat, stir the custard until it comes to boil.
  6. Take off the heat and stir in butter, ground almonds and essence. Cool until lukewarm.
  7. Peel the pears. cut in half and core. Pour custard into the flan case and lay the pears, cut-side down.
  8. Bake in 180 degree oven for 25 minutes.

Glaze:

  1. Melt the jam in the lemon juice and water over a gentle heat. 
  2. Sieve and then simmer for 5 minutes.
  3. Remove the tart from the oven and leave until lukewarm.
  4. Brush with warm glaze and sprinkle with almonds.
  5. Eat warm or cold. Enjoy:D

Honey Cake



Cake base:


  • 2 eggs
  • 2½ dl sugar
  • 100 g butter
  • 1 tsp baking soda
  • 5 dl flour
  • 3 tbsp honey

Method:

  1. Beat the eggs, sugar and butter together.
  2. In another bowl mix the flour and baking soda together and add it to the butter mixture.
  3. Then add the honey into the mixture.
  4. Note that the mixture will be hard. Don't worry. It's supposed to be like that.
  5. Then divide the mixture into 3 bowls. 
  6. In a square or rectangular pan ( NOT a circle pan)  take 1 bowl and pour the mixture into the pan. Spread it out, it will need some muscle power. The cake should be really thin.
  7. Bake the mixture at 180 degrees and keep an eye on it, because it's really thin and it bakes REALLY fast. It might take 5 minutes to cook. Set it aside to cool. 
  8.  Repeat that with the other 2 bowl mixtures and let them all cool down. 


Icing:

  • 20% sour cream (smetana) 
  • 2½ dl sugar

  1. Mix the sour cream and sugar well. 
  2. Place it between each layer, example; cake, sour cream icing, cake, sour cream icing etc.
  3. Cover the top with the sour cream icing and cut the corners. 
  4. Let it stay in the fridge overnight.
  5. Cute into pieces and serve.
  6. Enjoy! :D

American biscuits



Ingredients:


  • 250 g butter
  • 2 dl sugar
  • 1 egg
  • ½ tbsp syrup
  • 1 tsp vanilla sugar
  • 50 g chopped almonds/nuts
  • ½ tsp baking powder
  • 5½ dl flour

Method:

  1. Mix the butter and sugar well. 
  2. Add the egg, syrup, vanilla sugar and almonds/nuts.
  3. In another bowl mix the flour and baking powder and add them into the dough.
  4. Roll the dough into bars with a diameter of 4 cm. 
  5. Let it be in the cold over night.
  6. Cut the bars into thin slices. Place them on a baking tray covered with baking paper.
  7. Bake in a 200 preheated oven for about 5 minutes.
  8. Serve and Enjoy! :D

Chocolate Cupcakes



Ingredients:
  • 1 1/3 cups of flour
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 3/4 cup of cocoa powder
  • 1/8 tsp salt
  • 3 tbsp softened butter
  • 1 1/2 cup sugar
  • 2 eggs
  • 3/4 tsp vanilla extract
  • 1 cup milk


Method:

  1. Preheat your oven to 175 degrees. 
  2. Sift together your flour, baking powder, baking soda, cocoa powder and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one by one while stirring, then stir in the vanilla extract. 
  5. Add the flour mixture alternately with the milk; mix well.
  6. Fill the muffin cups about 3/4 full.
  7. Bake for 15-17 minutes in the oven, or until a toothpick come out clean.
  8. Frost with your favorite frosting when cool.
  9. Serve and Enjoy! :D

Lemon Bars



Crust:
  • 2 cups sifted flour
  • ½ cup icing sugar
  • 1 cup butter

  1. Sift flour and icing sugar together
  2. Cut butter into flour and sugar mixture till it clings together.
  3. Press into a pan. Bake at 180 degrees for 20-25 minutes or until golden brown.

Icing:

Beat together:
  • 4 eggs
  • 2 cups sugar
  • 1/3 cup lemon juice

Stir in:

  • 1/4 cup flour
  • ½ tsp baking powder.

  1. Pour icing over baked crust. 
  2. Bake at 180 degrees for 20-25 minutes.
  3. Sprinkle with icing sugar. Cut into bars when cool.
  4. Serve and Enjoy! :D

Donuts



Ingredients:


  • 2 eggs
  • 1 dl sugar
  •  2 dl milk
  • ½ tsp salt
  • 2 tsp lemon zest
  • 4-5 dl flour
  • 2 tsp baking powder
  • ½ dl melted butter

Method:

  1. Mix the eggs and sugar. 
  2. Mix the dry ingredients together and add one by one throw a sieve with the milk.
  3. Finally add the melted butter.
  4. Roll out the dough to about 1 cm thick sheets and cut out with a glass round circles.
  5. In the middle cut out a small circle.
  6. Fry 2-3 donuts at a time in hot (180 degree) oil on both sides.
  7. Place on kitchen paper and sprinkle sugar on top.
  8. Serve while hot or cold. 
  9. Enjoy! :D

Orange Cookies



Ingredients:


  • ½ cup butter (125 g)
  • 1 cup sugar (2,5 dl)
  • 2 egg yolks
  • 1 tbsp fresh orange juice 
  • 1 tbsp grated rind of 1 large orange
  • 1 ½ cup flour (3 3/4 dl)
  • ½ tsp salt
  • 1 tsp baking powder


Method:

  1. With an electric mixer, cream the butter and sugar until light and fluffy. 
  2. Add the yolks, orange juice and rind and continue beating to blend.
  3. Set aside.
  4. In another bowl, sift together the flours, salt, and baking powder.
  5. Add to the butter mixture and stir until it forms a dough.
  6. Wrap the dough in wax paper and refrigerate for 2 hours. 
  7. Preheat the oven to 200 degrees. Grease 2 cookie sheets.
  8. Roll spoonfuls of the dough into balls and place 1-2 inches apart on the prepared sheets.
  9. Press down with a fork to flatten. 
  10. Bake for 8-10 minutes or until golden brown. 
  11. Enjoy! :D

Chocolate Brownies


Cake Base:


  • 3 eggs
  • 3 dl sugar
  • 150 g butter
  • 5 dl flour
  • 3 tbsp cacao powder
  • 2 tsp baking powder
  • 1 tsp vanilla sugar
  • 2 dl milk or coffee

  1. Whisk the eggs and sugar into a foam. Add in the melted butter.
  2. Mix the dry ingredients in a bowl. Add them through a sieve one by one with the milk or coffee.
  3. Preheat your oven to 200 degrees.
  4. Bake the cake in a pan covered with baking paper for 15 min or until your knife comes out clean.
  5. Let the cake cool down.

Icing:

  • 5 tbsp hot coffee
  • 5 tbsp (60 g) butter
  • 4 dl (225 g) icing sugar
  • 2 tsp vanilla sugar
  • 3 tbsp cacao sugar

  1. Whisk the melted butter with the hot coffee.
  2. Add all the remaining ingredients and mix well. 
  3. Cover the cake with the soft icing and decorate with sprinkles or anything you like. 
  4. Cut into pieces and serve.
  5. Enjoy! :D
